Flavours broch text pages.qx 16/11/07 10:33 Page 6 Region BOLOGNA Bologna is a fantastic place to visit with an excellent food market in the city centre, and some seriously good delicatessens to shop in. It was once the city of a hundred towers and although there are now only two still standing, there are a host of churches, and galleries to explore. Food lovers will enjoy the visit to the gourmet Mercato di Mezzo - a covered market, brimming with charm and atmosphere, offering an authentic Italian gastronomic experience. Sample dishes Bologna has a reputation as la grassa- the fat one - however in reality, traditional Bolognese dishes such as tagliatelle al ragu are just supremely rich, rather than fattening! During the weekend the cookery lessons will focus both on the classic Bolognese dishes as well as more modern ones such as: Cappesante con zuppa di pomodoro e pesto di basilica (scallops with fresh tomato soup and pesto) Tortino di riso nero e verdure con gamberi saltati (black rice with vegetables and fresh prawns) Bocconcini di Ricciola con pure di melanzane e olio alla menta (seared tuna with aubergine mash and mint-infused oil) Crema Catalana (crème brulee) Bologna Scallops
