Chalet Meals
Whichever chalet you choose for your holiday you will find that the standard of cuisine is consistently high. For breakfast, you can eat as much or as little as you like. Choose from fruit juice, cereals, muesli, fresh French bread with butter and preserves, as well as cooked eggs, porridge or one of the hot options and of course tea or coffee. In our Select Service chalets croissants are also available. For afternoon tea, the most informal meal of the day, help yourself to home made cake or scones and biscuits, either eaten at the table or relaxing beside the fire. For dinner, one of the highlights of the day, using fresh seasonal produce, typical examples of the meals you will enjoy on a Ski Beat holiday are:Starters - Onion tart and crunchy salad; Chive pancakes with grilled courgettes and lemon butter sauce; Farmhouse potato and leek soup; Timbales with a piquant sauce. Main courses -Chicken fillets in a tarragon sauce; Roast leg of lamb with red wine sauce; Duck breasts served with a tangy citrus sauce; Sizzling salmon baked with honey and mustard. Vegetarian main courses - Spicy bean hot pot with a crumble topping; Leek and goats cheese pie; Baked aubergine layer;Vegetable ragout with cheese and onion mash. Desserts - Sticky toffee pudding with hot fudge sauce; Warm almond pear flan; Raspberry meringue stacks; Regional cheeses served with fruit. To complement your meal we serve free and unlimited good quality Red and White wines during the course of dinner. After dinner fresh ground coffee or decaffeinated coffee are served in the lounge.

In certain chalets we provide upgraded cuisine. In the evening you will receive canapés & aperitifs before dinner and Cordon-Bleu style food with a choice of
wines. After dinner a cheeseboard with fresh fruit will be provided. Freshly baked croissants will be served in addition to the normal breakfast. This upgraded service is based around the catering rather than any other aspect of your holiday; details can be viewed via an on-line video `Ski Beat Cuisine and Select Service'. Select Service is limited to certain chalets, which are run by more experienced cooks and chefs.

Children's Food
Parents bringing young children on holiday may take advantage of our High Tea option which is usually served at 6pm. Please tick the box on the Booking Form giving an indication of what you might like them to eat. This is provided at no extra cost and ensures that your child's normal routine is not disturbed. Soft drinks or milk are served with the meal.
Ski Beat Menu Plans
Several years ago we introduced menu guides within our chalets, allowing the chalet hosts to choose from a selection of suggested recipes from Ski Beat's own recipe book. This has proved to be very successful resulting in the vast majority of our guests classifying chalet meals as excellent in their holiday questionnaires. We believe this improvement was due to a good effort on behalf of our resort staff and the introduction of the Ski Beat Menu Plans. These were designed by Fiona Williams, one of our overseas Directors, who has recently published her second cookery book called "Cooking for Friends to Enjoy Yourself". This book is published by Foulsham and is available at most good book stores (ISBN: 0572030169).
Special Occasions, Christmas & New Year
Ski Beat would be delighted to help with the celebrations for any special occasion. Birthdays and anniversaries can be made even more memorable with a special cake and a glass of bubbly. An alpine chalet is a wonderful place to spend the festive season. We provide Christmas trees and decorations. On the day itself, you can look forward to aperitifs, turkey with all the trimmings, flaming Christmas pudding, mince pies, and of course Christmas crackers. For New Year most of our resorts will have torch lit descents, fireworks and other celebrations. Alternatively, you could just enjoy New Year's Eve dinner in your chalet with a glass or two of fizz.
